The yellow wine made from savagnin is aged in oak barrels for six and a half years.
Without a stain (constantly keeping the barrel full), there appears a veil of yeasts on the surface of the wine that gradually give birth to the Yellow Wine. That's why the bottle contains only 62cl called clavelin.
